It is said that Yamamotoya Honten is the restaurant that made miso nikomi udon, the specialty of Nagoya famous all over Japan. They have been serving dishes with all handmade ingredients such as noodle, soup stock and toppings since its opening. Their noodle is kneaded by hand by skilled chefs and boiled to be in a chewy al dente state. Each noodle holds the soup very well and the flavor of rich miso soup spreads in your mouth on every bite.
