Sushi Koubou San is the sushi restaurant in Tokachi, Hokkaido, that invented the famous dish, “gyu-toro-don.” Gyu-toro-don is an original rice-bowl dish that features local Tokachi produced high-class beef that is minced and placed raw over “sumeshi” rice that is flavored with vinegar and sugar. The fatty meat melts in your mouth allowing you to enjoy the most refined flavors of sweetness. The meat has a simple flavor with low cholesterol along with a rich and sweet flavor, all without any peculiar tastes one might expect from the raw meat.
