The sushi rice of Aiji is made of local ingredients: the local brand rice "Koshihikari" is mixed with "Imagawa rice" made of matured sake from local "red rice". It is hard to find this vinegar even in Japan. It has a mildly sour taste.

During lunch time, you can only choose a lunch course menu (4,000 yen, reservation is mandatory) in which you can have sushi of the chef's choice. It contains 10 pieces of sushi. Miso soup is served at the end. In addition to seasonal, local fish, sometimes vegetable sushi made of local famous vegetables called "Kaga vegetables" is served.
