(Source : 食べログ)
Shuukaen is a long-standing second generation ramen restaurant that was first established in 1927. Shuukaen is located in Onomichi City, Hiroshima, and is famous for serving the local specialty of Onomichi ramen. On weekends and during lunchtime, there are often long lines with many regulars who frequent the restaurant daily. The specialty “chuuka soba” here is known as the pioneer of Onomichi ramen. The chicken bone base clear-colored soy sauce soup gets entangled in the homemade noodles and is a masterpiece that has a simple yet strong flavor. It’s impossible to mention Onomichi ramen without mentioning this important restaurant.

Massive amounts of customers charmed by this ramen restaurant

The specialty homemade noodles are made with a small amount of water making them strong and springy and are flavored with natural salt so there is no bitterness to take away from the flavor. Onomichi ramen is well known for the pork back-fat that floats in the soup which creates an irresistible flavor that's not too oily.

Fantastic “chuuka soba” ramen that draws long lines

The famous “chuuka soba” ramen (600 yen including tax) is made with a clear soup that is chicken bone based and packed full of flavor from a mixing of seafood and tonkotsu (pork bone). The slices of chashu (roasted pork) that top the ramen have a fantastic balance of meat and fat making for a perfect texture to compliment the ramen. This is one ramen dish with a masterful level of completion from the simple flavor of the broth along with the rich and sweet taste of the pork back-fat floating on top.

Popular hidden menu: yakisoba

One dish that’s particularly popular among the locals is the yakisoba (800 yen including tax) which uses the same noodles as the chuuka soba. This voluminous dish packs so much meat and vegetables that it looks like it will literally fall off your plate. The dish is served lightly seasoned so if you want to add some more flavor feel free to use the yakisoba sauce available at each table.
