Hiroshima faces the Seto Inland Sea, in which a rich variety of fish are caught. The owner purchases them early in the morning at the market and transforms them in approx. 10 kinds of dishes. The garnishes are beautiful and very tasteful. You can ask the owner which Japanese sake goes well with this dish.

"Home-made Iwashi oil sardine" (550 yen) is a dish with small sardines from Seto Inland Sea, pickled in oil. The melting small sardines are very soft and taste great because they are homemade.
