This ramen shop located in 5 minutes’ walk from Takabata subway station, Menya Hanabi Takabata Honten is a popular shop often has many people lined up. The main menu here is Nagoya specialty noodle, “Ganso Taiwan Mazesoba”, the thick noodle without soup but topped with spicy minced meat. This shop is widely known as the originator of this menu, “Taiwan Mazesoba” and attracts many locals and tourists every day.  Not only “Taiwan Mazesoba” but other dishes also taste great. Exquisite Soup Made From Carefully Selected Ingredients

What makes this shop so special is their exquisite soup! The base of the soup is made from 18 whole chickens and pot herbs cooked over 10 hours. Then, the soup stock made from some seafood such as konbu (sea weed), niboshi (boiled and dried sardines) and dried scallops is added to the base soup to make the ramen soup. The salt used for their shio-ramen is also the ones carefully selected. It is the special blend of 2 kinds of salt, solar salt made in Vietnam and rock salt made in France.
