The Yoshida Kishimen Esca Restaurant is a kishimen noodle specialty restaurant that is directly managed by a long-standing noodle producing store established in 1890 and is located inside the Esca shopping center in the underground shopping area of Nagoya Station. Due to the direct management by the noodle making company, the kishimen noodles famous to Nagoya which are used in this restaurant come from a single affiliated noodle producer. Not only are the noodles made with top-grade domestic wheat flour and natural salt making them completely additive free, but they are painstakingly cared for in a highly monitored environment where the density of salt in the water and amount of water is minutely adjusted according to seasonal conditions which produce the wonderful slippery and springy character that the noodles are famous for.
