Yoshida Kishimen Esca Restaurant
The Yoshida Kishimen Esca Restaurant is a kishimen noodle specialty restaurant that is directly managed by a long-standing noodle producing store established in 1890 and is located inside the Esca shopping center in the underground shopping area of Nagoya Station. Due to the direct management by the noodle making company, the kishimen noodles famous to Nagoya which are used in this restaurant come from a single affiliated noodle producer. Not only are the noodles made with top-grade domestic wheat flour and natural salt making them completely additive free, but they are painstakingly cared for in a highly monitored environment where the density of salt in the water and amount of water is minutely adjusted according to seasonal conditions which produce the wonderful slippery and springy character that the noodles are famous for.

Outstanding compatibility with the broth!
At Yoshida Kishimen not only are the noodles additive-free but also the broth. The broth is 100% free of synthetic seasonings and made with stock from natural ingredients such as muroaji （brownstriped mackerel scad）, sababushi （dried mackerel shavings） and katsuobushi （dried bonito shavings） which enhances the taste of the noodles with pleasing and abundant flavors.
Topping-packed popular dish that’s a feast for the eyes
Our No. 1 recommendation is the ebi-ten okame kishimen （900 yen） which is a basic kishimen generously topped with ingredients like tamagoyaki （cooked egg） and soft fried shrimp tempura making for a feast for the eyes. With every bite the flavor of the wheat flour noodles fills your mouth and each satisfying bite into the toppings releases the sumptuous juices of the masterfully made broth!
The thick sauce entangled in the noodles is exceptional!
We also recommend the original creation of happo kishimen （900 yen） which is made by daringly topping kishimen with the classic Chinese dish of happosai chop suey! Not only is there a brilliant balance of vegetables and meat but this dish also has a light flavor which makes it super popular among the ladies.
