Rei-chan is a long-standing okonomiyaki restaurant in the Hiroshima Station Building ASSE. Since its foundation in 1957, this place has maintained its own way of making okonomiyaki: its dough, use of fresh vegetables, chewy fresh noodles and teppan (iron plate) that maintains a constant temperature. Until today, it has managed to maintain its popularity from travelers and local people, and it always has a long waiting line. They have unique extra toppings like mozzarella cheese and kimchi, and these attract more customers.

How to keep its quality

The major ingredient in okonomiyaki, cabbage is selected from different production areas all over Japan depending on the season. Only these employees who passed the test can grill okonomiyaki. The noodles are fresh and the okonomiyaki mixture must be rested for more than 4 hours. By this strict and uncompromising approach, this place has been able to maintain its delicious flavor.

This dish called Special (1,270 yen) has big pieces of raw squid and shrimp on it, and it is the most popular one among okonomiyaki menus with toppings. The basic okonomiyaki at Rei-chan comes with pork, egg, a lot of cabbage and noodles flavored with ketchup. In the Special, seafood is added to this basic one and it tastes really good.

This dish, Mozzarella Cheese (1,020 yen) is also popular at Rei-chan because of plenty of mozzarella cheese in the okonomiyaki. Usually Hiroshima-style Okonomiyaki has more vegetables and a lighter taste, but the melting cheese adds a rich taste in it.
