Kawaiya is a long-standing kishimen noodle specialty restaurant that is popular among the locals and located in a quiet residential area of Nagoya City. This restaurant established in 1921 produces its own noodles focusing on the three part process of kneading, stretching, and cutting the noodles all by hand. These noodles with a soft touch on the tongue and strong and springy body have been enjoyed for decades. There are also many different variations of kishimen to be found at Kawaiya! Be sure to check the menu on your visit for seasonal specialties like miso nikomi and curry nikomi available only during the winter.

The culinary masterpieces are brought to life by the traditional techniques used in making the noodles such as adjusting the amount of water and salt used according to the temperature and humidity of the day. The restaurant generally stays open until 20:00 but be careful because if the noodles sell out before closing time the restaurant may close as early as 19:00.
