Hanbe-Fu has a history of around 320 years solely making fu and yuba. Fu and yuba are traditional Japanese dishes, whose origin was brought over from China and then further developed in the temples of Kyoto. Since its opening this restaurant has been paying close attention to its ingredients, water and techniques. The texture of the chewy nama-fu (raw fu) and its taste are surprisingly profound.

The only item on the lunch menu, Mushi Yashinai Ryori (3,240 yen), is a course filled with yuba and fu dishes. You can enjoy different dishes with fresh yuba and fu as their main. There are various ways of preparation and tastes such as dengaku - grilled with miso, or smooth melting yuba, and the dishes all have different appearances, so it's pretty satisfying.
