Peace Garden Pan Koubou + Café

Located in Nakafurano, the center of Hokkaido, “Peace Garden Pan Koubou +Café” is a popular bakery in a renovated old farm house originally built about 60 years ago. The house had been abandoned for a long time. Its base, floor boards and pillars were rotten by the humidity and it looked almost impossible to renovate. However, three women who now run the bakery somehow managed to make it happen. They did all the work by hand like removing old nails one by one, without using any machines. They spent one year to renovate the house and finally opened their own bakery. Not only the house but also all their bread is made by hand without using machines.

Hand-kneaded Bread Using Homemade Natural Yeast

The concept of their bakery is “Good food is passed from hand to hand”. Their hand-kneaded bread takes time and effort, but they don’t use any machines. They also take pride in the quality of ingredients for bread, such as flour harvested locally called “Haruyutaka”, rye flour harvested in Biei, and homemade raisins to make natural yeast.

Bread to Enjoy the Authentic Taste of Flour

They have around 13 kinds of bread every day. The most recommended is “Marupan (round bread)” (210 yen). Both the appearance and ingredients of this bread is very simple. It is a popular menu that you can enjoy the scent and sweetness of flour itself along with the good taste brought out by raisin yeast.

Pay It Forward Lunch, Only for Limited Time

Pan Koubou has a café adjacent to it. It is open only for lunch time on certain days during summer. The unique concept of this café is “Pay it forward!” When you are invited and come here, your friend already paid for your lunch as a gift for you. If you want to give a gift to somebody else, you can pay whatever amount of money you are willing to pay for his/her lunch in advance and invite that person for lunch. This is an effort to make a long chain of gifts of kindness.
