Bread is also fermented in low temperature for a long period of time to maximize its taste. On top of that dishes served in the restaurant are made of seasonal ingredients, which go so well with bread.
Rich bread made of red wine from Shinshu
“Pain au vin Shinshu” (one loaf 3888 yen) is a hard bread with rich taste, made of home-made natural yeast. Inside the dough mixed with red wine from Shinshu, it is filled with four types of nuts and three types of dry fruits inside. Fig inside the dough gives the bread something extra. The smell of bread makes you want to eat more.
